Aeroccino Plus Automatic Milk Frother Review

Aeroccino Plus Automatic Milk Frother
Average Reviews:

(More customer reviews)
I really love it! You fill cold milk into it, push the button and after about a minute you get warm and very stiff cappucino-milk foam.
The newer Aeroccino Plus is an improved version of the older Aeroccino (no plus). It works great and - honestly - there is no reason to buy the old Aeroccino anymore (i own both)!
The Plus is larger, the milk doesn't burn to the floor of the kettle anymore, it can now be submerged into water (but no dishwasher!) and it can also do cold milk foam which looks great and stiff (hold the switch for about 2 seconds - the light turns blue instead of red).
Finally cleaning is really easy and can be done with water, sometimes a little soap and with the hands - there is no burned milk anymore (as with the old version). They also improved the coating so nothing sticks anymore.
If you love cappucinos or cafe-lattes, get one!

OXO Good Grips Salt and Pepper Grinder Set Review

OXO Good Grips Salt and Pepper Grinder Set
Average Reviews:

(More customer reviews)
My sister turned me onto OXO kitchenware a few years back. She has issues gripping utensils. I liked them for their construction, how well they work and easy clean up. I saw these mills and loved the look and the quality materials they are made of. They are solidly constructed yet still light enough not to cause issues for those that OXO items were designed.
Both mills have adjustments on the collar above the see-through storage portion. There are little "ears" that allow selection of one of five various settings for "fine" through coarse granules to exit the mill.
I wouldn't call any of the dispensed salt or pepper "fine" but that's perfectly okay for me and my family. Please consider other options if you like "pepper dust" as these puppies just won't grind that fine.

As others have noted, the mills set "upright" with the ceramic teeth facing the sky. It seems a little point, but how often have you lifted your old pepper mill to find flecks on the counter or table top? Filling and actual turning of the base portion to dispense either the pepper or salt is effortless.
I couldn't be more pleased with my purchase. (In fact I have a feeling I know what I will get some family members for a certain upcoming holiday)
Unless you simply don't have access anything other than pre-ground salt, I urge you to get the set that contains two mills, not the pepper mill and salt shaker)
Both mills do come loaded ready for use. I read where some have dumped the peppercorns that came with, to refill them with the identical black peppercorns. Whole spices tend to have a lengthy shelf-life. Upon checking, I see they say peppercorns have about 4 yrs. A few have dumped the salt too. It must be due to their concerns with contamination rather than the salt going bad. Being a hearty soul, I opted to not waste what came to me. Pungent pepper and salt as fine or course as I ask is delivered painlessly in two beautiful little packages. I couldn't be happier with my decision.

Calphalon Copper Triply 2-1/2-Quart Shallow Saucepan with Stainless Lid Review

Calphalon Copper Triply 2-1/2-Quart Shallow Saucepan with Stainless Lid
Average Reviews:

This pan is a good buy and a wonderful size for 2-3 member families. Although not as heavy as some of the french copper pans, I have many of the Commercial Calphalon pieces and love the handle. The pan is definately heavier than cheap quality pans and the stainless interior is just what I wanted for acidic based cooking (tomato sauces, etc). As far as scratches, well, what do you expect? If you use it, it is going to get some scratches... the brushed exterior helps hide some of the outside marks though. Some have complained about "scratches" on the other Calphalon hard anodized, but most of the time, they really aren't scratches, but rather aluminum marks from the rivets when stacking. In any case, they are easily removed with scotchbrite and some cleaner! Enjoy! P.S. I chose the "no shipping cost" delivery and received the pan in just 4 days!!

I am so sorry this pan didn't work out. I used both the large and small skillet for a few months and then everything started sticking to them. I took back the larger one after this happened and got a brand new one, which everything started sticking to again after very little use. I cook with olive oil, no PAM, and have never used it on high heat. It is super hard now to clean. Scrambled eggs completely coat it and it takes a lot of work to clean them off.

Sitram Catering 4.9-Quart Commercial Stainless Steel Saute Pan Review

Sitram Catering 4.9-Quart Commercial Stainless Steel Saute Pan
Average Reviews:

(More customer reviews)
This is a large (11" diameter) saute pan that will brown and evenly cook almost anything you can get in it. It is a very heavy (a desirable attribute) pan. So, if you plan to toss your food while sauteing, you'll need both hands. Almost all of the exposed parts are made of high quality stainless steel, so it's non-reactive (ok for acidic foodstuff) and can be cleaned effortlessly with a Scotch-Brite pad and Bar Keeper's Friend detergent.
The copper disc (~2.5 mm thick) in the bottom of the pan, will give you the responsiveness that you expect from a copper pan without burning a hole in your pocket. If you are sauteing at a continuously high heat, then a similar pan in the Sitram Profiserie line which uses a thick aluminum disk (instead of copper) might be a better buy because it is cheaper, a bit lighter (easier to toss) and may hold heat better when dumping a lot of cold food in it (especially if your burner does not put out a lot of BTU).
If you cook on a smooth ceramic cooktop, just like me, you might want the heavier weight of the Sitram Catering line because the added weight prevents the pan from sliding all over the place.
IMHO, the responsiveness of the copper pan will get you saut?ing sooner than most aluminum pans. Copper is a better conductor than aluminum so it will transfer heat faster. Also, you'll need about 2 times the thickness in aluminum (compared to copper) to make it cook evenly. Since you will be heating a thicker mass with a slower conductor, you will wait a little longer to get comparable aluminum pans to the high heat required for sauteing. Since I am rather impatient, I'll pay extra for copper.
In the same token, the responsiveness of a copper pan will make it cool faster when removed from the heat source. I find this characteristic desirable when I am deglazing or making a sauce after sauteing or frying.
You might read some experts suggest that a fully clad pan (the conductor goes up from the bottom to the sides of pan) is what you should get. They claim that a copper disked pan can have some hot spots and burn food on the side of the pan. Before you run out and spend at least 3 times what you would if you bought this Sitram saute pan, consider the reason behind the suggestion. A fully clad pan with the conductor going up all the way in the sides of the pan will prevent the food from burning in the sides of the pan if a heat source is directly heating the sides of the pan. There are two main reasons not to worry about this in a saut? pan. First, when sauteing you will be tossing and moving bits and pieces of food around. Hence, there will be little time to burn food stuck on the sides of the pan. Second, you will only have this problem if heat is directly applied to the sides of the pan. This pan is 11 inches wide. You'll need a big gas burner going at full blast to get flames scorching the side of this pan. In my case (or for anyone using an electric stove), burning on the sides of a pan is not a problem since there are no flames to worry about.
Finally, I hate having food stuck on those large rivets (that connect the handles) on most pans. Sitram welds their handles so they are much easier to clean. And if you think that their welded handles won't outlast your daily use of this pan, think again. This thing is built like a tank.
And, one more thing about the handle. The Catering line has a "half-moon" handle. It is meant to be held with a towel (like they do in commercial environments). If you do not use a towel, you might feel the handle a bit weird and uncomfortable. I own a number of Sitram Profiserie pans and they have the more popular round handles. After some time (and a few burns holding handles of pans that came out of the oven), I have found the half-moon style handles of the Catering line very comfortable and easier to grip especially if your holding a fully loaded pan.
So, here's the bottom line - if you like the heat responsiveness of a copper pan, and you don't want to pay 300 bucks for a fully clad copper pan, then buy this. At this price point, you would have to try hard to find something comparable.

Capresso Cool Grind Coffee Grinders Review

Capresso Cool Grind Coffee Grinders
Average Reviews:

(More customer reviews)
I'm disappointed with this product.
I've only been using this grinder for a week with my Aeropress brewer so I'll keep it short... and yes, I purchased it because of the Cooks Illustrated recommendation.
It's noisy. The motor/bearing assembly seem to be cheaply constructed as it oscillates between a semi-smooth whirring and a nasty vibration sound while grinding.
It's slow. I bought the Krups 203 today to compare grind speed and consistency side by side... no contest. A 20 second grind using identical amounts of identical beans in each grinder yields a MUCH finer grind with the Krups. Grind consistency in both was close enough I suppose but the Krups grind looked more uniform, probably because it was finer.
This also brings up the point of the "cool grind" feature. It seems to me that you are negating any benefit if you have to grind twice as long (which heats up the beans more) to achieve the same consistency as the Krups.
The Krups motor also feels more powerful and it certainly runs more smoothly and has a more precise feel.
I'll wait a while to actually review the Krups officially but the Capresso was a disappointment and is going back to Amazon.
UPDATE:
OK... I added a star to the review... here's why...
The Capresso makes a superior TASTING cup of coffee compared to the Krups!
After using the Krups to actually make coffee I noticed a strange, chalky aftertaste/film left in my mouth by the Krups ground coffee. This is using the same beans I was using with the Capresso and trying many different grind times and coffee amounts, the funky taste was still there.
In disbelief I pulled the Capresso out of it's return box and made a cup with it... the funk was gone... wow.
Something about the higher RPM, more power, and/or blade profile of the Krups is not doing fresh coffee beans justice and I probably never would have caught this had I not tried both grinders.
I am still not happy with the QUALITY of the Capresso grinder so it will be returned (along with the Krups) but I have learned a valuable lesson about coffee taste being VERY noticably affected by the grinder and if this is the case, I have no choice but to try a burr grinder.

The wood holder is very sturdy and well built, I expect it to last a very long time.
A couple of negatives -- the tools are a bit short, they would be more useful if they were 6" to 12" longer (I nearly have my hand in my wood stove when using the poker). Also the broom isn't that useful for sweeping (I've decided it is most decorative).

Global Chef's Knife 8 in. Hollow Ground G-61
Average Reviews:

This is a great knife for a cook who cares a lot about quality and blade design. It has the Japanese angle (which I believe is a 15 degree compared to German much more abrupt), so it is very very sharp. It's ready to use straight out of the box, but you might want to give it a rinse to get any packaging gunk off of it. It uses great steel, and I grew up using a lot of different hunting knives, so I care a lot about the quality and grade of steel that is used. This is a very light and well balanced knife as well. I highly recommend this knife if you want to break away from the heavier German knives.

The knife is constructed using methods similar to the Samurai swords of old, with a razor sharp, thin blade which is extremely durable; each knife is carefully weighted to ensure perfect balance in the hand. The smooth contours and seamless construction eliminate food and dirt traps, offering the ultimate in safety and hygiene. The darkened dimples on the handle provide a non-slip grip. The all-purpose chef's knife is ideal forslicing large quantities of vegetables, fruit, and meat quickly and effectively. The granton (fluted) edge creates pockets of air which prevent extra-thin or soft slices from sticking to the blade.Size: 8"

Why did I ever use the elbow greese and stone methode to sharpen my knives? I recieved this sharpener as a gift. setup was easy I just pulled it out of the box made a couple of miner settings then pluged it in. In a matter of minutes I was shapening my dull kitchen knives. The sharpening action is very easy, just run the knife through the first slot a few time then through the second slot a few more and with the aid of the electric motor my knives come out sharper then when new. I've used this sharpener 40 or so times now and it still puts a fantastic edge on my knives. This sharpener would've been well worth my investment with just the time I save not having to sharpen by hand, had I bought it for myself. It does it's job well.

Corelle Livingware Winter Frost 16-Piece Dinnerware Set, Service for 4 Review

Corelle Livingware Winter Frost 16-Piece Dinnerware Set, Service for 4
Average Reviews:

(More customer reviews)
It says a lot about a product like this when it's been continuously available since 1970. I've owned Corelle for most of the past 30 years. I recently bought a 17-piece set from Wal-Mart (same as this + a 1-quart serving bowl) for about $24 to replace some Corelle pieces that didn't match my Winter Frost pieces and to have more place settings. The mugs are cheap stoneware made in Thailand, not Corelle. They don't quite match the Corelle and they're going to the Goodwill along with the mismatched plates and bowls, but it was still a good deal for the rest of the set.
I love Corelle. All Corelle looks as if it was stamped out of a sheet of white glass, which is a result of the way it's made. There are no "base rings" or loop handles (which is why there have never been any Corelle mugs). The design makes Corelle very easy to wash and dry. They're very thin, and they stack with virtually no extra space in between them so they use remarkably little cubbard space. A stack of ten dinner plates is only 2" high. Try that with those heavy stoneware plates that chip every time two of them bang together. They're microwave- and oven-safe (don't use on the stove or under the broiler). And they're still made in the US.
It's as if Corelle was invented for large families with lots of kids. It's durable, so the kids won't be breaking it very easily (although it will break on ceramic tile or the concrete if the kids drop it while playing outside ;-). Second, you can easily put 8, 12, or even 16 place settings in any cabinet. If you have kids, you know why that's a good thing. Every time kids eat anything they have to use a clean dish, and they snack a lot, so they go through clean dishes at a frightening pace. With Corelle you can have a big supply of dishes without breaking the bank or using a lot of cabinet space.
Another nice thing about Corelle is that you can use the plates to cover the bowls. The small plates that come in this set are the same diameter as the cereal bowls in this set. The 8.5" luncheon plates (sold separately) are the same diameter as the 1-quart serving bowls and the pasta bowls. The dinner plates in this set are the same diameter as the 2-quart serving bowls and the 9" deep dish pie plate (which makes a fabulous pasta bowl).
The Winter Frost White looks simple, clean, and never goes out of style. Really, after using Corelle for nearly 30 years I don't have even a nit to pick with it. Get a bunch of it and enjoy the best designed dishes ever made. With any luck you'll still have them in 20 or 30 years, and don't be surprised if they still look new after that all time, especially if you go over them with Bon Ami once or twice a year.

Oxo Good Grips Smooth Edge Can Opener Review

Oxo Good Grips Smooth Edge Can Opener
Average Reviews:

(More customer reviews)
This can open works like a charm. As others have observed, the first time you use it, you might not think it did anything, but it has cleanly split the soldered seam joining the lid to the body of the can. You can tell you've gone the entire 360° around the lid because the handle starts turning with less resistance.
Some have said you have to lift the lid by inserting your fingernail into the split in the solder seam, or by using needle-nose pliers, but that's not true, at least not on the lastest model. OXO actually has included a tiny set of metal pincers on the side of the can opener opposite the turning knob that engage as you move the handles together -- they do a fine job of gripping the edge of the lid so you can lift it away from the body of the can. (They're just not an obvious feature unless you happen to read the very tiny instruction brochure that comes with the can opener.)
As with all OXO "Good Grips" products, they've made this one ergonomic for ease of use, especially by people who have difficulty with their hands. The two handles you squeeze to get the can opener seated on the can lid are large and bulky enough to squeeze easily, with a rubbery feel that makes them non-slip. The knob or handle you turn is also large, bulky and rubbery so that it not only doesn't slip, it's easy to hold onto while you rotate it. Because the can opener is gear driven, it turns easily and smoothly as the can revolves.
I still have my old Swing-A-Way can opener that cuts the lid out, a gear driven model that I can't fault for its performance. I've kept it around because I'm sure there might be an odd can or two that the newfangled can opener won't handle, but so far that hasn't happened.
Another thing -- with this new OXO, since there's no blade cutting down through the lid to pick up food or liquid from inside the can, you have a can opener that stays way cleaner with no blade coated with accumulated black grunge.
You can even put the lid back on the can if you want for refrigerator storage of unused portions of what's in the can (though I myself prefer putting leftovers in a plastic container with an airtight lid).
I have no idea who thought of this method of opening a can, but it's brilliant -- a true example of thinking "outside the box."

Cuisinart DLC-2 Mini Prep Plus Food Processor Review

Cuisinart DLC-2 Mini Prep Plus Food Processor
Average Reviews:

(More customer reviews)
When I starting searching for a mini-chopper I was surprised by the huge rating difference between the Cuisinart DLC2 and the KitchenAid KFC3100, so I bought both and did a side-by-side comparison. The only explanation I can give for the ratings difference is that Cuisinart buyers must have higher expectations. For most operations they have nearly identical performance and for some operations the Cuisinart is the clear winner.
Onions: Many Cuisinart reviewers panned its performance here, claiming it made onion purée, but most KitchenAid reviewers praised its onion chopping ability. I found almost no difference between the two. Maybe its an issue with the instructions - for chopped onions you must use a few short pulses. A few more pulses and you get minced onion - more than this and both give you onion puree. I wouldn't say either is great at chopping onions, but both are equally mediocre.
I also tested chopping nuts, and making breadcrumbs with similar results. Both performed about the same for a course chop, although the Cuisinart produced a more even chop on the nuts, but its when you want a really fine chop that the Cuisinart starts to shine. The first reason for this is the grind feature found only on the Cuisinart. This spins the blade in the opposite direction which allows the flat, back-side of the blade to impact the food. More importantly, it redistributes the food, so if you've got a couple of chunks that refuse to be chopped, a short pulse in the opposite direction helps it drop into the blade. For perfect, fine breadcrumbs I alternate between the normal chop mode for a few seconds, and grind for one second.
The other reason the Cuisinart gives a better fine chop is that it does a much better job of cycling the food through the blade. This is a real key when you're working with softer foods like spreads, pâtés or purees. When I made a cream cheese spread in both choppers the Cuisinart did a far quicker and better job of pulling the ingredients down the center and into the blade. The KitchenAid kept larger chunks bobbing on top. If you're making dips, spreads or baby food, the Cuisinart is the hands-down winner.
On the practical side, both choppers were equally easy to clean. Both have small holes in the lid for pouring in liquids on the fly, but only The KitchenAid has a slot for dry or thick ingredients - if that's important to you. Overall, I found the Cuisinart easier to use for several reasons. First, the Cuisinart blade drops on easily, while the KitchenAid blade is keyed and I found myself turning it several times before it dropped in. Second, the KitchenAid lid must be removed first before you can lift off the bowl, but on the Cuisinart, the bowl and lid can be detached as an assembly. Finally, the Cuisinart blade has a "handle" that extends to the top of the bowl like a popsicle stick allowing you to remove the blade without getting your fingers in the food.
After all my testing, I really can't understand the large ratings difference between these two. Neither is perfect - you'll never get a perfect, even, course chop with things like onions or chocolate, but they do come in handy. For many uses either one will give you pretty much the same results. Because of its advantage with softer foods and its ease of use, I recommend the Cuisinart.

Calphalon Katana Stainless-Steel 8-Piece Knife Set with Block Review

Calphalon Katana Stainless-Steel 8-Piece Knife Set with Block
Average Reviews:

(More customer reviews)
Pros:
These knives are pretty, with a rounded black handle, and a layered damascus-style blade. This means the blade, while relatively smooth, has a wavy-layered look to it. The Amazon picture is accurate to what you will receive in your set. Out of the box, each knife is quite sharp; enough to shear paper, but not hair.
I have smaller hands, and have some trouble wielding the 8" chef's knife, but find that the 5" Santoku is excellent for chopping vegetables. The 6" utility knife is also very useful for thinly slicing meats. I do use a different paring knife (Pampered Chef) as I find the Katana paring knife a little too sharp and rigid for say, lopping the ends off string beans in my hand. We also made the additional purchase of the 9" bread knife to complete the set. The bamboo block is attractive, and the slots are wide and deep enough to put other wide-bladed/long knives in. However, note that if you get the bread knife, that only leaves 3 empty slots (i.e. no dedicated steak knife slots).
Cons:
Two slight cons about this set: (1) The diamond-sharpener looks too coarse to use on these blades, and; (2) The shears in this set are lackluster. While they are relatively heavy-duty, they do not come apart for cleaning, and the handles are a little large and unwieldy. I prefer a smaller-handled set of kitchen shears that come apart for cleaning (when I decide to cut meat instead of slicing it, a la Alton Brown). But in their defense, they do cut cleanly.
Comparisons:
We love our Katanas, and they make ordinary chopping/slicing a much more endurable chore with their sharpness and ease. If you are "stepping up" from an ordinary consumer-grade set, you will definitely feel the difference. For example, I had a $90, 10-piece Kitchenaid set. The Katana Santoku knife is definitely more balanced, and the garlics/onions slide right off the Katana's grooves, whereas sometimes foods would stick on the Kitchenaid. I do find that the Kitchenaid chef's knife is slightly easier to handle, due to the longer curve (better rocking-chopping motion), and the slightly reduced weight, but the Katana is sharper, more rigid, cleaner-cutting, and therefore faster. The Kitchenaid shears were lighter (easier to wield) but flimsier. Unlike the KitchenAid shears, don't expect the Katanas to make a scissor-like snipping noise, they are entirely silent. The Katanas do require slightly care than your run-of-the-mill knife set, but simply wash them shortly after you're done using them and dry them prior to putting them back into the block.
Personal Opinion:
I don't know what "Professional Chefs" think, and I'm just an average cook. Thus, these knives went above and beyond my expectations by reducing my prep time, and adding an attractive focal point to the counter. Granted, they don't come out of the block making a lovely ringing steel noise like our Shun steak knives, but for the foreseeable future on a limited budget, the Katanas are a worthy investment.
Some Miscellaneous Notes:
These knives are made from VG-Japanese steel, but they are manufactured in China. We found this set (1st Quality) at more than 50% off in one of the big box stores, which made it a steal. However, if we had paid full-price, we probably would have done a comparison with a Shun knife set instead.
[Edit - July 2008] Since purchasing these knives, we have noticed the following: (1) do not leave them overnight in water - as they will rust badly, (2) the 5" Santoku has inexplicably developed two hairline fractures in the blade. It was my favorite knife, was not used on inappropriate objects/materials (not used for chopping bones or anything), and was always used on a cutting board, so this development within a year has been very disappointing. I still like the set, but the rusting and the fracturing make me a little less pleased with them. I would drop the star-quality to 3.0-3.5.

Marble Mortar and Pestle Review

Marble Mortar and Pestle
Average Reviews:

(More customer reviews)
This looks exactly like a mortar & pestle that I bought at a kitchen store over 10 years ago, (It was labeled as a house brand, so it's possible mine came from a different manufacturer.) But I wanted to comment on its design, which is very hard to find.
I can't understand why it's hard to find this design. It's awesome! The pestle, being so big that it covers the whole bowl, quickly crushes & then pulverizes everything in the bowl. Just grasp the pestle, press down, & move the handle around in a swirling motion for maybe a dozen swirls. Very easy to use.
Maybe the traditional pestle transmits more force when crushing extremely hard seeds, I don't know, but I've always felt that crushing spices with this was awesomely fast & efficient.

The simplest and best way to grind and crush herbs and spices. The polished marble is impervious to flavor transfers and has a textured surface on the interior of the mortar and the base of the pestle for better crushing and grinding. The wide pestle helps to crush the smallest of spices and helps prevent spices from escaping the bowl.
