(More customer reviews)The wife and I received this as part of a wedding present. It soon became my favourite piece of equipment in the kitchen. You can cook almost anything with this and, eventhough there will be a quarter inch of gunk stuck to the bottom, this will clean right off when you wash up.
One slight criticism: both sides of the pan have changed colour; the bottom has gone more coppery, the top has taken on a dusty look to it. Still works fine, though.

(More customer reviews)This pan is a good buy and a wonderful size for 2-3 member families. Although not as heavy as some of the french copper pans, I have many of the Commercial Calphalon pieces and love the handle. The pan is definately heavier than cheap quality pans and the stainless interior is just what I wanted for acidic based cooking (tomato sauces, etc). As far as scratches, well, what do you expect? If you use it, it is going to get some scratches... the brushed exterior helps hide some of the outside marks though. Some have complained about "scratches" on the other Calphalon hard anodized, but most of the time, they really aren't scratches, but rather aluminum marks from the rivets when stacking. In any case, they are easily removed with scotchbrite and some cleaner! Enjoy! P.S. I chose the "no shipping cost" delivery and received the pan in just 4 days!!

(More customer reviews)Okay, let's get one thing straight. If you're the type of person who requires your cookware to remain 100% scratch free forever- you are probably not much of a cook. Sorry, but pots and pans are not invincable and if you use them . . . *really* use them, they are going to get dinged, burnished and yes, even scratched. Yet, I have found that these are actually quite resistant to the kind of wear and tear that I have experienced with cheaper products and I have most definitely USED them (metal spatulas, whisking with a fork, accidentally burning oil in them . . . those of you who wince at scratched pans are probably in the fetal position at the mere mention of such practices). Despite my rather kamikaze approach to cooking, the triply has maintained a high degree of beauty and strength. A few scratches here and there, but they conduct wonderfullly and make up for my cheesy apartment range.
The copper discolors when it is exposed to a lot of heat, but I don't really care. The burnished copper turns purple, green, yellow, even blue sometimes, but it scrubs away easily with the proper polish- if you must polish it away. I think it looks fine and is a sort of badge-of-honor to the world. Tarnishes and scratches all declare to my kitchen's visitors that I spend more time cooking with my pans than I do maintaining their pinkish-orange sheen.
