I find the snug fitting cover, which is about 3/4 inch higher than the pan, perfect for covering yeast rolls to raise. I have multiple Airbake products and the insulation prevents overbrowning on the bottom. There are no dark brown edges on cookies with Airbake.

(More customer reviews)I learned of this pan from my Grandmother. We use it in the oven in place of anything that you would normally cover with aluminum foil. Just use the lid instead! It is called a "cake" pan but can actually be used for so much more! Last night I used it to make lasagna, which turned out great. The metal lid has two other benefits: 1) it can be used alone as a cookie sheet and 2) when you carry food or store it in the refrigerator, you don't have to worry about the lid getting smashed like the rubber ones that are on glass dishes. It is very lightweight. I am not sure how it will hold up over several years but for the price, you should get your money out of it.
